What is Robusta Coffee? Everything You Need to Know

Robusta coffee is the second most widely grown coffee variety in the world, after Arabica. Vietnam is its spiritual home. And yet most coffee drinkers in NZ have never intentionally ordered it. Here's what it actually is and why it's worth knowing about.

Where Robusta comes from

Coffea canephora, the plant that produces Robusta beans, grows mainly in West Africa, Indonesia, and Vietnam. Vietnam is the world's largest Robusta producer, responsible for around 40% of global supply. The plant thrives at lower altitudes and in hotter, more humid conditions than Arabica, which grows at higher elevations with cooler temperatures.

This hardiness is part of what gives Robusta its name. It's more resistant to disease, pests, and adverse weather than Arabica, which is part of why it became the dominant crop in Vietnam's Central Highlands.

How it tastes

Robusta has a bolder, more direct flavour than Arabica. Where Arabica often has fruity, floral, or acidic notes, Robusta tends toward chocolate, earth, wood, and a natural bitterness. The aftertaste is longer and more lingering. It's less complex but more intense.

Commodity Robusta, the kind used in instant coffee and cheap espresso blends, often tastes harsh because it's low grade and poorly processed. Specialty Vietnamese Robusta is a completely different product: clean, smooth, and genuinely distinctive.

Why it has more caffeine

Robusta contains roughly 2.2 to 2.7% caffeine by weight, compared to 1.2 to 1.5% for Arabica. The higher caffeine is a natural defence mechanism. Growing at lower altitudes where pests are more prevalent, the plant evolved to produce more of it. More caffeine in the bean means more caffeine in your cup, roughly double that of a standard Arabica espresso.

Why it's used in espresso blends

Italian espresso roasters have been blending Robusta into their shots for decades. The reason is crema. Robusta beans produce a thicker, more persistent crema than Arabica when extracted under pressure, which is one of the markers of a well-pulled espresso. A small percentage of Robusta in a blend also adds body and intensity that lighter Arabica roasts can lack.

What Vietnamese Robusta is specifically

Vietnamese Robusta from the Central Highlands is widely considered the best in the world. The altitude, soil, and climate of the region produce a bean that's bolder and more flavourful than commodity Robusta from elsewhere. When it's sourced well and roasted carefully, it's not just an affordable alternative to Arabica. It's a genuinely different and worthwhile coffee experience.
