Why the Roast Date on Your Coffee Matters More Than the Best Before Date

Pick up a bag of coffee at the supermarket and you'll find a best before date, usually 12 to 24 months away. Pick up a bag of ours and you'll find something different: a sticker with the date the beans were roasted.

That difference isn't cosmetic. It's the single most useful piece of information on a coffee bag, and most brands don't print it.

The two dates tell you completely different things

A best before date answers one question: is this safe and sellable? Coffee is a dry, shelf-stable product, so the honest answer is yes for a very long time. Stale coffee won't hurt you. It just won't taste like much.

A roast date answers the question you actually care about: when did the flavour clock start? Because from the moment beans leave the roaster, they're changing. Aromatics escape, oils oxidise, and the bright, complex flavours fade toward flat and generic. A best before date says nothing about any of that. A bag can be 11 months into its 12 month window and still technically "fresh" by the label.

What actually happens after roasting

Freshly roasted coffee is full of carbon dioxide, which escapes over the first few days. That's why very fresh coffee blooms and bubbles when you pour hot water on it. As the CO2 leaves, oxygen moves in, and oxygen is what stales coffee.

The rough timeline: coffee hits its peak somewhere between a few days and about four weeks after roasting. It's still very good for a couple of months if it's stored well and bought as whole beans. Beyond that, the decline is real and you can taste it. Ground coffee fades several times faster, which is one more reason grinding your own beans is worth it.

Why most brands only print a best before date

Not because they're hiding something sinister. Because their supply chain can't survive a roast date. Coffee that's roasted overseas, shipped by sea, held in a distribution warehouse and then sat on a shelf can easily be months old before you ever see it. Print the roast date on that bag and nobody buys it. A far-off best before date keeps the question from being asked.

That's the quiet trade-off in most supermarket coffee. It's not bad coffee. It's old coffee.

How to use the roast date

When your bag arrives, check the sticker. If you're within a month of roast, you're drinking the coffee at its best. Keep the bag sealed, cool and dark, buy whole beans if you can, and work through it within a couple of months. Our storage guide covers the details.
