Pre-ground coffee is convenient. Freshly ground coffee is better. If you've been on the fence about a grinder, here's the honest case for making the switch.

Freshness is everything

Coffee starts losing its aromatic oils the moment it's ground. Within days, a lot of what makes a coffee interesting has simply evaporated. Pre-ground coffee that's been sitting in a bag for weeks can't compete with beans ground 30 seconds before brewing. You unlock the full flavour

Grinding releases the bean's oils and aromatics right when you need them. That first hit of aroma when you open the grinder is flavour that would otherwise have leaked out of a pre-ground bag weeks ago. With a fresh grind you taste the whole spectrum: the chocolate depth in a Robusta, the light florals in an Arabica.

Grind size is control

Every brewing method wants a different grind. A phin filter wants medium-fine. A French press wants coarse. Espresso wants fine. Get it wrong and the coffee under-extracts or turns bitter. Grind at home and you can dial in exactly what your method needs, and adjust when something's off. If your phin is dripping too fast, the fix is usually the grind, not the filter.

Whole beans keep longer

The intact bean is its own packaging. Whole beans stay fresh significantly longer than ground coffee because less surface area is exposed to oxygen. Buy whole, grind as you go, and the last cup from the bag tastes nearly as good as the first.
